Vanilla Chai-Infused Overnight Oats with Chai-Spiced Apple

If you need some giddyap to keep up with busy mornings, overnight oats provide healthy fats, fiber and protein to help put some pep back in your step. Tasty as heck and easy as pie to prep, this next-day breakfast option saves time in the AM without sacrificing nutrition or flavor.


1/2 cup boiling water

1/3 cup old fashioned oats

1/2 tbsp chia seeds

3/4 cup Greek yogurt

1 tsp cinnamon

1 apple

2 vanilla chai tea bags



  1. In a mug, add hot water and steep one chai tea bag for 2-3 minutes
  2. Meanwhile, in a bowl combine oats, chia seeds, yogurt and cinnamon
  3. Add 1/2 cup of hot tea to the bowl and mix well. Refrigerate overnight (or at least 2 hours)
  4. In the morning, chop (and peel if desired) one apple and add to a bowl. Add enough water to cover the apple pieces and sprinkle cinnamon on top. Microwave for 1:15
  5. Add a vanilla chai tea bag to the hot apple mixture and steep for 2-3 minutes
  6. Drain apples and add to the top of your overnight oats
